Savoy, with Tam

In case you didn't know, fried chicken is all the latest craze, which is why we just had to go to Savoy for their limited, off-the-menu, fancy lunch of heritage bred fried chicken. And thanks to the power of the internet, Tam joined us at the last minute. The crispiness was perfect, the flavoring just right but none of us could have anticipated the firmness of the meat itself, apparently a known tendency in free roaming chickens. It's fascinating how a lifetime of eating industrialized chicken can leave you unprepared for the real deal. Peter himself kindly came over to chat with us about the differences in the way chickens are bred and we left lunch all the more knowledgeable for it.
