The Bowery Diner, with Raymond

We had lunch with Raymond today, at the Bowery Diner, so we could talk about diner food, food trends, concepts of food, favorite restaurants now gone and places we love. The chicharron and sausage in the Colombian breakfast, aka Bandeja Paisa, were outstanding, truly delicious. Overall both the breakfast and the smoked meat sandwich lacked an oomph factor, or maybe we like our meals with a little less dryness

I saw Anthony Bourdain eat a similar breakfast when he visited Colombia.

I am trying to identify the condiments accompanying this interesting plate of food. My guesses would be (from left to right) some type of roasted tomato salsa, shredded cheese, and what looks like pickled okra but is probably a pickled jalapeno pepper.
