2:30pm griddle hot cakes

This is how a conversation goes between us, as we gobble down a bag of hot cakes in less than a block:
Y (me): These taste not the same.
M: They do seem different than usual.
Y: It's like they're denser
Y: Or not as fluffy or yeasty.
M: It's tastes as if they got the proportion of rice flour to regular flour wrong.
M: Maybe they didn't put enough rice flour in the batter.
Y: Or they didn't beat the batter enough so there's not enough air.
