This carrot cake is kinder to the eyes than to the palate. That's not to say it's bad. The toasted coconut on the side is a nice touch.

I tell you man, any kind of cake with an abundance of frosting always SEEMS like a good idea, and 20 minutes later I'm always left writhing on the floor clutching a bottle of tums. Yet, it is always worth it.
