4:00pm sponge cake

Since I was so furious at myself for getting the wrong thing at New Kam Hing last week, I was determined to do it right this time. Upon inspection, the spongecake was not as "flat" as I had imagined. But as others have noted, the ratio of the browned parts to the innards is really the key. These cakes are noticeably sweeter, egg-ier and vanilla heavy than the others I've had. And while the texture is still air light, it's denser. I'm not sure how I feel about all this yet. But they are undeniably good and addictive and I will be going back for more.
